Coffee cookies

125 gr butter or 70 gr butter and half cup liquid oil
1 egg
1 cup sugar or half cup blackberry jam
A few drop lemon juice
A pinch of salt
Another bowl: 2 cup flour, 1 tbsp wheat starch, 1 tbsp baking powder, 1 tbsp vanillin, 2 tbsp coffee, 2 tbsp cacao
6 pieces walnut

Mix evertything together until you have a soft dough. Break a small piece a little bigger than hazelnut. Roll it between your palm.  Make all dough in the same way. Line them in a tray. Press a sushie stick in the mid of cookies to give them a coffee bean shape.
Bake it 15 minutes in 180 C ( 350F) preheated oven. Not more than 15 minutes.

Ginger Cookies

3 tbsp butter
1/2 cup liquid oil
and 2 cup sugar (mix them together thoroughly)
1 tbsp fresh ginger (grate it on the small holes side and mix with first mixing)
2 eggs (add two eggs into the mixing)
1 tbsp cinnamon
A pinch of salt
3-4 cups flour
1 tbsp baking powder
1 tbsp mahaleb (optional)
Mix cinnamon, salt, baking powder, mahaleb and flour together and add it into the first mixing and create a soft dough that is not sticky to your hand. Wrap this with stretch film and keep it in fridge 30 mins. Then take it and give any form you want and put on baking paper and bake 15 min 180 C or 325 F heated oven.

Krem Karamel / Cream Caramel

1 kg milk
1 cup sugar (mix and heat it 5-6 minutes)

4 eggs ( scramble all eggs and mix them with milk by first low speed then high speed mixer )

For Caramel
2 tbsp sugar
2 tbsp water ( put these in a pan and boiled until the color become golden brown)

10 small fire-resistant cups

First pour caramel a little by little in every small cup then pour the milky mixing in. Put the cups in a tray and add cold water in a tray until half. Cook in 375F heated oven.
It is delicious and healthy.

Sebzeli Börek / Vegetable Pie

Ingredients:
1 Onion (sliced)
5-6 mushroom (sliced)
3 red pepper (cut into small pieces)
3 zucchini (cut vertically four pieces and cut into small pieces)
1 carrot (grate it)
1 potatoes (grate it)
1 small tomato (chopped)
4 garlic cloves (finely sliced)
1 bunch parsley (finely chopped)
1 cup olive oil
1 cup milk
4 spoon butter
1 egg
A pinch of salt

Cut all vegetables into pieces as in the pictures and saute them in a pan with olive oil in 10 minutes. Spread 1 full layer dough in tray as edge side coming out and put two more dough layers on it. In every layer wipe milk, olive oil and egg mix. Put all sauted vegetables on. Spread two layers dough on vegetables.  Wipe the mix between layers. Wipe the rest of the mix on the top dough. Slice around 4 spoon butter on the top and bake it 350F heated oven until the top is crisp golden brown.

I always use baking paper on the bottom of tray. Dough doesn't stick to the tray and also it is very easy to clean the tray.
